This recipe uses alaska salmon. We also have recipes for lots of other ocean-friendly species

You will need

  • 2 lbs. fresh Alaska salmon
  • 1 cup fresh breadcrumbs
  • 2 large eggs
  • 4 tbsp. lemon juice
  • 2 egg yolks
  • 1 shallot
  • 4 tsp. chopped dill
  • 1 clove garlic
  • 1 cup canola oil
  • salt and pepper to taste

Remove skin and all bones from salmon. Finely chop salmon and place in a large mixing bowl. Add breadcrumbs, whole eggs, 1 tbsp. lemon juice and season with salt and pepper. Mix well to combine. Mixture should be firm enough to form patties. Form into four burger patties and refrigerate.

Add remaining lemon juice, egg yolks, garlic and shallot to a food processor. Puree until smooth. With processor running, slowly drizzle oil in to emulsify. This needs to be done very slowly or the aioli will separate. Add salt and pepper to taste.

Heat grill to medium. Grill salmon burgers 3-5 minutes per side or until they reach an internal temperature of 140-150 F°. Serve burgers on crusty rolls and top with aioli.
